I need to identify any documents that are "checked-out" in a document library....
This property is available in any action in Nintex WF by looking for the item's Checked Out To (Sp? - not on my system at the moment) property. If the field is empty - item is not checked out. If not empty, the contents is the name of the person who checked out the item.

Further to Gerards suggestion, you can use a Query List action to populate collections with the document details, for example Document ID and "Checked Out To". Also implement a filter in this action to only target those documents where the Checked Out To field contains a value.
You could then iterate through these collections in a for each loop to perform any particular set of actions on the individual documents.
