On completion of a form, how can I return to a SharePoint site page rather than to the updated list?
In the Nintex Form Designer: under "Settings" on the "Advanced" tab set the Redirect URL to the desired page you wish to be taken to.
I've used this setting on several forms and it works as intended.

A follow up question, or perhaps "Feature request" what about when someone does not save or submit the form, but cancels out? I have some work arounds I've used, but it would be cool if we could enter a redirect when then item is not completed also. e.g. If I have a sensitive list that I want people to contribute to by completing a form, but then never see so no confidential or sensitive information that doesn't apply to them is seen, I have so far come up with a kind of clunky solution. I use the redirect upon completion mentioned about so the use is taken back to another area and is none the wiser where the data was submitted. However, I find when they open a new form but cancel out, it defaults to the All Items default view of that targeted list or library. So I modify the All ITems default view to only show items completed by that user, I then created views for the permitted users. I created another library to store and secure these restricted views and moved them into this new secured library using SP Designer. So my generic users only see items they have submitted when they cancel out, and permitted users navigate to the secured views I have housed elsewhere. It works, but it's not elegant to say the least. Would love an option to redirect on a cancelled entry also.
