Today's Date variable only showing as: 1/1/0001 12:00:00 AM

Hi- I am on O365 Nintex and I have to create a variable for today's date. 

 

I will then have actions trigger when todaysDate= anotherDate. 

 

Any ideas why the date is showing in the workflow as 1/1/0001 12:00:00 AM only? I have the box checked "Use date when action is executed"   any other options for using today's Date in a workflow?

 

I originally wanted a workflot to manually start, then when varToday= Monday Reminder Date to send #1 email with title "Be Proactive" , then next Monday varToday=MondayReminderDate  (and Wednesday) but realized it would only work once correctly since there is only 1 start of the workflow. The varToday would always be the date the workflow started, correct? I originally assumed each day the variable would represent that day's date for as long as the workflow was running. Just trying to figure out the best way to run this so it starts with Week 1, then next week, Week 2, etc. It has to be something like Run If Week is greater than or equal to 1, then next week, Run if Week is equal to 2, etc. I just don't know how to make that variable change each week. (increment by 1)
