I know it can be achieved with calculate date action, but i m not getting proper configuration of this action.

Right, use Calculate Date .... configured like this :
Date = Workflow context / Today
Days = -2

I do have exactly the same problem with the same fault notice (except the language).
The variable are set correct "EndeFortschreibung_Datum" is a date-typ variable, the other one "EndeFortschreibung" is a text variable.
The fault notice is "Fehler bei der Berechnung des Datums. Der addierte oder subtrahierte Wert ergibt eine nicht darstellbare DateTime. Parametername: value".
Which is exactly the same then posted above.
Anyone a idea how to fix this? Or may be how to configure a Workaround?
make sure lookup correctly identifies a calendar item and returns valid value from date-type field.
I would suggest to make lookup before date calc action and store it to date variable. to proof check return value is what expected I would write it to history log.

the dateRequiredReminder is a variable set up as Date/Time.the Required By is a date field showing Date only (without time) > Display Format: Standard
If I change the -7 to 7 does it not mean is a positive number meaning it will add 7 days on top?!
