I have a form created, and the controls are bound to fields in the list, but when I change a value in the form, it does not get saved to the list. Any suggestions? Thanks.
Right at the basic level, does your form have a Save button and is this being clicked before you look for a change in the value of the field?
Yes, has a Save button which acts like it's working, but then results in no change on the list.
Have you tried changing the button action to 'Save and Submit' in Nintex Forms. That should perform what you're looking for.

That should do it. I don’t currently have access to the form to try it – 30 day trial ran out – but will keep that in mind for next time.

We have seen this in a couple of scenarios:
2. When you have a column in the list that is set to only have unique values in it. The error is hidden by the Nintex Form.
You could try exporting the form (so you have a copy), deleting the Nintex form, try to add the item with the same values with the out of the box SharePoint dialog to see if there are any errors.
