I figured it out. I created a variable and set it to the Link Text I wanted. Then in the update item step I used - Link to Item, Variable...and that ...

I was in the wrong place, I had to go to the SP Admin Center App catalog. This resolved my issue. Thanks to Both of You.

I went to the app at the root site and re-activated all the sites. I am still having the same issue.

You can use sharegate or powershell to get them all yes, but after much back and forth with support, you can request an audit from your sales rep...
