I'm curious to know if anyone is using Nintex / Sharepoint as an asset tracking solution? If so, would you be willing to share ideas, short comings, learnings, etc.

Yes this is being done in many different forms. It really depends on your business use case and requirements. From what I have seen and implemented, I've used a few list for declaring the types of assets, have another list to track the actual asset, and workflows to manage items as they come and go.
I am also using electronic approvals which is being managed via tasks in SharePoint and are generated with the workflows.
I know thats not a lot of detail, but it can be done with SharePoint and Nintex without much complication.
