I am working on updating Forms and Workflows for my 2013 environment. We are currently on version 126.96.36.199. I did not originally install the application(s) and am trying to determine where I should run the install. Can you point me in the right direction?
Also, is there a different install file for an update/upgrade of an existing install or do I use the installer located on the Product Download page?

you can always use the installers from the download page. They will automatically recognize that Nintex is already installed and perform the upgrade.
Installation of on premises products is always done from one of the web front end servers of your SharePoint-farm and will be rolled out to all web frontend servers automatically.
