Hi,
I have a problem with Flexi Task Item properties not displaying at Approver level. It shows blank when the Approver opens the task for approval
I give the Initiator and Approvers Full Control when the Workflow kicks off. I change the Home Members group permissions to Restricted interfaces. Can this be the cause?

SharePoint will grant a user their highest privilege defined for them for the item they are working on. What could be happening is you granted the Approver full control on the item the workflow is running on, but they have the permissions defined by Home Members(Restricted) for all other lists - including the Workflow Tasks list. In which they have no permissions to edit the task and complete it.
I would review what lists are inheriting permissions from the site and those that are not. A user can have higher privileges on one list and not another.
