I am wondering if I can uninstall Appit from a site without affecting Appit on a subsite. For instance, if I have a main site collection, Site A, and a sub site, Site B, and Appit is installed on both....if I uninstall Appit from Site A, will there be any effect to Appit functionality on Site B?

As far as I have been able to test out I haven't found any reason why you wouldn't be able to delete Appit from a main site and not have it available to any subsites that rely on the parent site. As long as you have the app correctly installed on your subsite you should be able to use it unless it is specifically denied for some reason. Hopefully this answers your question and if you run into any issues let me know as I am interested to see if there is any reason why you shouldn't be able to have an Appit instance on a subsite when it isn't installed on your main site.
