I have implemented a workflow successfully within my SharePoint site and the permissions appear to be set up correctly, however all users appear to be getting the following options under the 'Settings' menu for Document Libraries and Lists:
K2 Web Designer
Create K2 Process
I want to remove these options for a certain group of users, but do not want this to affect the workflow that I already have set up and running.
Can anyone help me out?

I don't think this feature has been implemented yet. You would need to make a feature request.

With the current version, You can only disable them on a site collection basis.
Site Actions-->Site Settings-->Site Features-->Deactivate
After deactivating the K2 Designer, the options will be gone from library and lists, BUT can still be accessed by browsing to the URL
http://<sitecollection url>/K2WebDesigner.aspx?List=<library guid>&SiteUrl=<sitecollection url>
