I have a list with a customized nintex form. In the menu there is a button with all of the versions. Unfortunately there seems to be no clear assignmenent of created item and used nintex form version at this time....
The problem is, if I change the form later and publish it, also the former created items (with the old nintex forms) use now the new published nintex form.
Is there a way that each list item uses the form version with which it was created before?

This is not true. It can cause big problem in audit. When we make a change to a Nintex form and publish it, the changes are made on ALL existing items in the list. This causes us to lose historical data and work done previously. When audit comes, we could not access the data that was relevant at earlier time but not relevant after the last form publish. We need to preserve the data on the form. Is there any way to preserve previous form data?
this is probably a topic for separate discussion, but shorty: form is just a GUI for data in list or library. it doesn't hold data on its own. resp it shouldn't be designed the way that persistent data are stored just in form and not written to list/lib.
for auditing purposes you should rely on other tools that are designed for that purposes, like version history.
