I've been trying to extract XML data from Nintex form to another same SharePoint list or Excel file.
Issue:-
The information entered by users through Nintex form to be transformed and save into SharePoint list as existing Nintex form fields are not connected to SharePoint fields. Can I extract existing 200 data items value into excel or List through Nintex Workflow?

yes, you can inspect the form using Nintex Workflow by querying the property Form Data of the item who has the form.
The content of Form Data is an XML structure with all the fields you have put in your form, they should be named with the Name you have specified but in same case I've found that they're still named with a guid, so I have to query using that specific value..
