Referencing variables in Choice control?

Why can we not reference form variables in a choice control? This seems like a pretty well-needed place for accessing variables. How do you get around a choice control when you need to build them on the form, such as current year minus 1?

Right now there is no such functionality in the product. If you like to see this feature in Forms then please add a request at Nintex UserVoice.

because choice options has to be known when form is being rendered, and variable values aren't known at that moment yet.

 

possible workaround migh be to provide list of option from a list field

but for your specific case I'd stick to date control. see following examples how to restrict what dates/years are selectable from the control.
