Hello,
I need to set up task escalation (let's say from Approver to Substitute) after few hours. I already built workflow just don't know toh to connect task to column substitute (can't fin it in workflow variables).
Also I need to set up rule if there is no substitute define in approval matrix than no action is taken.

You can create a new list with list of Approver to Substitute and query this list within the workflow and store the Approver to Substitute in workflow variables to pass the escalation, also use run if to check the substitute is empty or not within workflow variables
