We are creating a workflow which may need to look up an employee's Business Unit ("Organization" field in AD) in order to complete. It will look up the Organization then assign an approval task to an HR manager based on that Organization. Is there a way to do this? Preferably, I'd like to be able to do this within the workflow, however, any other methods would be welcome.

In your workflow, you can set a variable to any User Profile properties if they exists in AD. Organization is usually a Tab in AD properties. You can look for department within this tab. Set Variable, equals User Profile, Source - Department When Account Name is equal to: Insert Reference - Initator.
For the next part, you can set a source list. Create two columns, Department and HR. Once you have the department, set another variable using lookup to this list where Department is equal to previous variable. Hope it helps.
