I need to be able to open a completed ProcessInstance and afterwards initiate a new ProcessInstance with this form (infopath) including all data entered before and some data which will be additionally added. Is it possible and does someone has a best practice for that ?

You must remember that once processes are finished they are removed from the K2 database completely - It is only present in the K2Log database.
You can still get to the data -> If you have the processinstance ID you can query the K2Log database and retrieve the XML for the completed process. This can then be used in another instance of some process.
