How can I disable a field until a certain date?

Hi!

I am looking for a way to keep a field disabled until 2 days prior to a given date field. Hoping you can help!

In the below screenshot, I only want the "Escalate" and "Escalate Reason" fields made available 2 days prior to the Desired Delivery Date.  Any ideas?

can you use calculated expression control to work out the date (2 days before) and then use that control with current date in a formatting rule?

I don't really know what to do.  Or what may be the best route to take.
