Each Access Web App that’s published to SharePoint comes along with its own standalone SQL database. Since the Access Web App data is in a separate SQL database and SharePoint can't see it, you can't create SharePoint workflows as a result.

Nintex Workflow cannot see Access Apps either.

The only workflow around for this that I can think of is that if you can call a soap web service from the Access App on submit or button click you could call https://{Sharepoint}/_vti_bin/NintexWorkflow/workflow.asmx to start a site workflow / list workflow and pass parameters through start variables.
