just to be sure, you ran the workflow and did not get result. you didn't test just with run now in query dialog, did you?
it looks like variable does not resolve for unknown reasons to what is expected.
could you proof check there are not some non-printable characters in variable value? it may eg. happen that you accidentally typed space char (0x20) somewhere and nintex converted it to non breakable space (0xA0)
LEQ or GEQ, that doesn't matter it should return some results.
for TODAY, try
<Value Type="DateTime"><Today OffsetDays='-30' /></Value>

you can not expect run now will guess what might be a variable value at runtime. it simply takes it literally.
you always have to supply some sensefull data manually.
