I am looking for a way to automatically file documents based on metadata. I have done this in the past with SharePoint Designer by using an impersonation step and updating the path of the document. However, Nintex doesn't seem to recognize the "Path and Name" field that can be used in a SPD Workflow. In short, I want users to select their department when adding a document, and have the document automatically move to that department's folder.

Do you use folders just for navigation and organisation?
If this is the case, this would be much simpler -
You can just have a column "Department" on the library.
Then in the default view, group items by "Department"
