I'm currently using a Query List Action in Nintex 2010 and need to only look for items that were modified in the last 7 calendar days. Is it possible to filter by that date range? If so what would be the formula?

If Query list action does not help you to achieve your desired result, you can try using 'Call Web Service' Action and directly query this list.
It will provide much more flexibility.
