I found a small glitch in the 'Copy to SharePoint' action from the Nintex Workflow 2010. It's from the 'Override Credentials' section in the configuration window of this action.
Below are the reflection steps,
1. Expand the 'Override Credentials' section.
2. Select a credential that is stored by the Workflow Constant.
3. Now try to remove the credentials, and manually type-in
The glitch is that it replaces again with the stored Credential, from the WF Constant.
Do you ever try to write something in the "Username" input?
Once you begin to type, "Password" input should be unlocked.
Then, you're able to delete content from both inputs.
I have tried several time to type-in the Username field, but it gets replaced with the Stored Credentials that was initially inserted. This happens for an action which was already configured using Stored Cred's and then tried to type-in credentials manually.
In my case it allows to type-in, but after the focus is out of the text box, the typed-in credential is replaced with the stored ones.
And the password text box also looks disabled since the 'Username' field was not able to retain the Typed-In text.
I'm using IE 11 currently. Because of this behavior, I had to create another 'Copy to SharePoint' action and configure it as needed.

I have just replicated the issue. What you can do is the following:
1) Type in something in the Username box
2) Then press Tab
3) Remove the typed stuff in Username
It does seem like a little bug.
