Yes, when you run the SharePoint Process wizard the first time, it will ask you what fields do you want to import. You can then select the "Created By" or "Modified By" fields which will be populated to the corrosponding datafield when the process is started.
You will notice however that it cpatures the user's Display Name. You will need to query AD using this value if you need the User's ID or any additional information.

Is there any simple way to send an email to a user based on the created by or modified by fields of sharepoint doclibs?
This would help a lot to mitigate the missing identity when responding to document library events.
Could the K2 defautl doclib eventhandler possibly pick up on the created and modified fields, perform a lookup to get the email and expose these values as datafields in the process?
