So I’m trying to update my Nintex 2016 Solution from 4.2 to 18.104.22.168 and it just sat on creating Core Components upgrade job for 3600 seconds (1 hour) before moving to the next WSP which also failed. Anti-virus disabled, UAC turned off, I used an account that was a Farm Admin and local admin of all servers, database owner and all the other prerequisites... Any thoughts as to why this happened? Could I manually remove and add the new version of the WSPs?

It looks like the environment is having issues deploying solutions.
The help files have a section in regards to deployment issues.
I suggest downloading the test solutions from the help files and trying to deploy them. If they do not deploy there is an underlying issue with the environment that you may need to seek help from Microsoft support to resolve.
