I am still a bit new to K2.
I want to sort my worklist according to what their process datafields is. Would this be possible???

This is possible using the K2ROM and creating a custom worklist. Take a look at the training material for detailed instructions on how to create a custom worklist.
Also, look in the "help" directory underneath your installation folder (e.g. C:program filesk2.net 2003help" for the K2ROM.chm help file. Underneath the "Classes" heading, open the WorklistCriteria -> Methods -> AddSortField Method items to see some example code regarding sorting a worklist.
