the preparer have 100 task for example he will get 100 email at one time. No
one likes that many email at one go so we pretty much can’t use the
I am wondering is there a way to create a workflow that will
send email to preparer a summary of all the task has been assigned to him
rather than one per item. For example, there are 100 task created for one preparer,
and we want to send a single email notification to the preparer with all the
100 task link.
Is this very hard to achieve using nintex workflow?

You can use some actions like, Query List, Loop, Notification so as to loop on the task you want to notify and create a unique email with the information you gather on the loop.
Anyway on that cases it's recommendable that pending tasks for each user, to be viewable on a web part on the sharepoint site.
It'd be more usable for the Preparer, Reviewer.

We do have few webpart and dashboarding option in the site that indicates the tasks assigned to the user, Groups etc.
There are some external/overseas users who will be assigned to many of these task. Most of the cases the external users doesnt log to the site to see what task has been assigned to them or what is over due. We could use a simple item creation workflow but that will spam the user with an email/task. So, if there are 50 task created user will get 50 email. This is surely annoying for users.
I am sure this can be done with Nintex but I am confused how tricky will be to add all the 50 task URL in one email to the users. we have task list which adds all the entry when task get created along with the url. Any easy /proper way how can I get all the link in single email?
