Hello guys.
Do you know if there is any way to be sure if forms that are submitted through nintex live have synced to the sharepoint farm? Is there any place I can check the forms that have been submitted other than the sharepoint list to be sure that the forms are being synced to sharepoint?

I'd say no. What you can do is to monitor the live connection status in your farm. If there is any problems the submissions will be queued. After the connection has been reestablished the queued submissions will be transferred to your environment. So checking the connection between your environment and the live service - manual or with a script - should be enough to ensure that submissions will be synched.

Are you talking about checking the connection in Central Administration, under Nintex Live Management - Health checks?
Do you have any example of a script that could do this?
