There may be a simple way to do this, but I'm not finding it. I just need to know what process version was, or is being used by the process instances on a workflow. How would I go about finding this information?
You should be able to tell the process version under the management tab in K2 workspace.
I believe if you use the View flow for that process instance and click on the "Start" activity, it will tell you which process version it was running on.

View Flow was the answer! Thank you, very much! I had been all over the Management Console, and had also explored K2 workspace reporting options - including View Flow, but I didn't think to click on the Start activity. There it is. Thanks again for your help with this.
