Using one Query List Action to return multiple results

I'm probably being really thick here. It's part of an on-going workflow. I've got a library called 'StartersandLeavers'. I'm using a number of Query List actions to return results and store them in variables, but someone has suggested that this may be causing problems and has suggested that I configure just one Query List Action to return all of the results.

So I set the list to 'StartersandLeavers', the Filter to 'Select all list items' then in the sort I select the field I want and save it to the variable I want, but I can't see a way to select another field and save it to another variable? I presumed that's the way it would work, or am I taking the wrong approach?

Any help appreciated.

it's not the most intuitive action.  Select another column from the dropdown - and it will add it below for you to map to another variable if that makes sense?

haha I guarantee you that catches 99% of users out...  I remember having the same issue!
