I have an approval workflow set up on a list. I'd like to add the participant who completed the task to the list item after they complete the task but I can't find Participant name anywhere in the context browser after the User Task step. Does anyone know how I could accomplish this?

Have you considered usign a Smartbox Smartobject to get the particpant back?

Another idea is that since sharepoin lists organically have an approval column you could just set up that column and then whenever the approver does their action they will be stored as the user that last modified the list and that user can be gotten here:
That's the Context Browser>>Item Reference>>List Name.
