At first I created a workflow which the task is assigned to the Manager of the initiator. It is working already and when checked with our working group, they added another requirement. Which is to have a backup approver. Below is the current workflow that I have:
The requirement is, there will be a default approver (which is the Initiator's Manager) and a backup approver.
We are also taking consideration that the Initiator's Manager can delegate a task and set a date until when.
The third scenario would be, what if the Manager forgot to delegate his/her tasks to the backup approver?
In this case, we will be including an option for the initiator to choose predefined approvers in a dropdown list. And this will automatically be sent to the backup of the default approver.
Would you know how I can execute this requirement?

You can delegate the task and approval request by checking the "Allow Delegation" option within the Request Approval action.
You can also set it up so that after X amount of time, the assigned task is auto-delegated to a specified user/group. However to do this you will need to switch to Assign Flexi task action. This action allows you to escalate the action after a specified time:
You can delegate the same way using this action as well.
To swap out actions, simply add the Flexi task action to your workflow and then move the corresponding actions onto the desired responses and configure the Flexi task action. Once you have that configured, disable (do not delete until you test the new action!) the Request approval action and test the workflow.
You should be able to delegate to someone else as well as set an escalation after X amount of time. This would allow for the backup to be delegated to if the manager does not respond in the set time frame.
