What happens with running workflow instances if we re-publish a nintex workflow for O365?, there is official documentation with this topic?...

 

I knew that Nintex on-premise, workflow running instances still working with version that they start, only new instances will run with the re-publish workflow.

running instances will continue to function under the context of the previous version. All new instances will have the new changes. I don't know if there is official documentation around this subject.

What Andrew stated is correct.  This is not a Nintex fact but Workflow Manager fact. Their can only be one complete instance of a workflow running.  If you republish that workflow, it then becomes a new instance and thus can run with the new changes.  If you do not terminate the other instances that have not yet completed and restart the workflow on those items, they will not pick up the new changes.
