Hi in Nintex 2010 to start a List workflow from a Site Workflow we used Call Web Service, but now In Nintex O365 with the action Start Workflow , you cannot specifify the List Name, only the workflow name. Which is the best way to call a List Workflow from a Site Workflow in O365?.

In the action "Start workflow" you can specify the workflow type "List workflow".
And after the item ID in your list. Check the documentation of this action
As a workflow (name) is unic in your site, it's not required to provide the list name. With juste the workflow title, it will be able to start your worklfow on your list item in your list
