I had some problems with nintex workflow, so after getting severely frustrated I've decided to start from scratch: so now I have a simplest possible workflow with default "assign task" step - it sends an email with a short description, after clicking the link user should be asked to fill the form.
Instead user is taken to the task description:
And there is no way to actually get and edit the form that actually is defined in the "Assign task" step.
if you click Edit Item in your second screenshot, do you have the possibility to complete the task?
Unfortunately at the moment, the task URL available goes only to the display form of the task, not to the edit form.

No, if I click "Edit" it lets me edit the task - i.e. the task name, start date, etc but not the form itself. And while I can put a link to the item, it takes me back to the original form, not the one that has been created in the "Assign task" step, which is against the whole idea of my project: form has to be filled by 3 different people and they shouldn't be able to see/edit what other person filled.
so you have edited the task form?
Have you done it with Nintex Forms? In that case, the task form should be rendered by Nintex Forms instead of standard SharePoint Forms..

You can manually create a link that will open in edit mode. By default, it displays the Display Item
but by changing the last bit of the URL it can open default in edit mode
You will need to know the url of the list and the ID of the item which is all available in the common properties and then you add text EditForm.aspx in-between.
Similar Principal will apply if you want them to create a new item from a link in a email.

on O365 when you assign a task, you don't have the ID information of the task, or, at least, it is not available during configuration of the assigned task email..
