In order to reassure our client we would like to know how save/export our data before the end of a subscription.
Our product is : Nintex for Office 365: Enterprise Edition

I would guess that you would export the list to excel; or if you would like to continue using the list, as-is, save it as a template (including content), the create a new list with this template, and revert to the standard list form or create an alternative one with InfoPath (if that is still available to you).
Yes I would export the list to excel. Could you tell me how to proceed ?

Goto List -> Export to excel
