Take a look at this asset in Nintex Xchange to see if it solves your problems.
Also feel free to search for business days in the community. This was a common request so I'm sure someone has an answer for you :-)

The link in the linked article does not work. Moreover We don't have Nintex forms subscription in our account.
Strangely enough in workflow process : auto escalate option allows to auto complete task after certain business days but add time option does not allow addition of business days.
