Do you see this behavior on all the forms or just one form?
On what device are you seeing this behavior?
If issue happens only one one form, try re-adding the control to the Form and test.

@ajaya This behaviour is for all o365 mobile forms submitted via the app. I'm currently submitting from an ipad.

Nintex is aware of this issue.
If you are using Nintex Mobile from the relevant app store please update to the latest build to resolve the issue.
If you are using AppStudio this issue will be resolved in the near future.
