I am using the approve office 365 action for nintex workflows. My issue with this is that a service account has to be used. My security issue with this is that anyone with design permissions can get into the workflow and see the service account username and password. We use the same service account to publish workflows farm wide. It has very elevated permissions. Am I missing something apparent, or is there another way to mask the password in the approve action?

I had this very same question as I didn't want to hard-code the credentials into the actions. From my comms with Nintex, at present the actions that require credentials need to be hard coded with the credentials. I've noticed that the password does get encrypted once you save the action though so there is less risk of a user accessing that account's full credentials.
There's a UserVoice request for this that has already been started, hopefully it gets implemented soon!
Secure Password variable including Workflow Constants – Customer Feedback for Nintex
The above is correct. No such thing already. You have to type in manually each single time. But that uservoice request is said to be in progress There is a hope

If you check roadmap.nintex.com - Connection Manager for O365 is in development and will likely solve your case here. Secure Store does not have accessible APIs for the Store Apps so is not viable.
