When using CreatedBy(Display Name) as a default value in single line of text, it is showing blank on already created items.
I suggest using the insert pop-up, select the Context tab on the top right and scroll down to "Item Created by Display name".
Then the property for Default value will show a green box with "fx" in it followed by [Context].[Item Created by Display name"
