How to edit all list fields when clicking the edit icon? Only the form displays but there are more items in the list that need to be populated separately.

You can edit items in bulk quickly by using the option built into SP (2013 depicted below).   But Nintex Forms are generally meant for 1:1 editing > meaning 1 item per form.   You could get fancy and create an interface that would allow for the editing of more than one item but there isn't a whole lot of support for this at the moment and you'll probably find it easier using the method below.
