What happened to the green colored boxes in the workflows that indicates what stage/step it's in?

Yes , even Assign Flexi task is available only in on-premise.

But , still you can achieve more-or-less the same outcome using the "Assign a task" and "Start a task process" actions.

I just reviewed our Nintex contract and it does state that we are supposed to get the O365 service and not on-prem. Thanks for the info, I’ll have to contact our sales rep.
